Yield: 4 cups  

 

 

Ingredients

 

1/3 cup maple syrup

 

1/2 cup freshly squeezed orange juice, strained

 

3 tablespoons cold butter

 

Butter for coating the inside of the casserole dish

 

1/8 teaspoon ground cinnamon

 

2 tablespoons bourbon whiskey

 

Pinch nutmeg

 

5-6 (approximately 3 pounds) medium-sized sweet potatoes, baked and peeled

 

 

Directions:

 

 

Preheat oven to 450° F.

 

Butter the interior of a medium-sized casserole with cover.

 

Combine sugar, orange juice, butter, cinnamon, whiskey, and nutmeg in a medium-sized sauce pan over medium heat.

 

Whisk to combine until butter has melted.

 

Bring flavored butter syrup to a simmer and reduce for 5 minutes.  Reserve off heat.

 

Mash sweet potatoes in a bowl.

 

Pour thickened syrup over potatoes.  Use a fork to stir the syrup into the mashed sweet potatoes.

 

Place mashed sweet potatoes with syrup in the casserole dish.  Cover.

 

Bake 20 minutes or until hot.

 

Place in serving dish.

 

Dot with butter curls.

 

Use a fine mesh strainer to dust a pinch of ground cinnamon over the top.

 

Serve.
