Ingredients:

1 teaspoon Cajun Blend

2 – ¾ pound sweet potato

2 teaspoons grapeseed oil

 

Steps

  1. Preheat oven to 400° F.
  2. Line a baking sheet with parchment paper.
  3. Scrub the sweet potatoes.
  4. Peel the sweet potatoes.
  5. Slice each sweet potato in half, lengthwise. Slice each half into 3-4 wedges.
  6. Pierce the cut sides of each wedge with a fork approximately 6 times.
  7. Brush the cut sides of the wedges with grapeseed oil.
  8. Sprinkle Cajun Blend mix over the cut surfaces of the wedges.
  9. Place sweet potatoes on the baking sheet.
  10. Bake in preheated oven for 1 hour, or until fork-tender.
  11. Remove from oven.
  12. Place on serving platter or bowl.
  13. Serve.
