Mr. Nick sure likes his whisky, even in his jerky.

 

 

Ingredients:

 

2 tablespoons brown sugar

 

2 tablespoons apple cider reduction

 

¼ cup apple cider vinegar

 

2 tablespoons honey

 

2 tablespoons cinnamon

 

½ cup Irish whiskey

 

1 pound top sirloin tip, thinly cut across the grain, trimmed of any fat

 

 

Steps

  1. Combine brown sugar, honey, apple cider reduction, Irish whiskey, apple cider vinegar, and cinnamon in a ceramic or glass bowl, just large enough to accommodate the meat and marinade.
  2. Add meat. Stir thoroughly to coat the meat with the marinade.
  3. Cover bowl with a tight fitting lid and allow to marinate for 24 hours in the ice box.
  4. Strain meat from marinade. Discard marinade.
  5. Arrange meat strips in chosen method of dehydration.
  1. Dry until meat cracks, but does not break, when bent. 
  2. Store in an airtight container in a cool place. for no more than 1 month.
