Yield: approximately 2 dozen
Ingredients:
10 tablespoons unsalted butter, at room temperature
¼ cup powdered sugar
¾ cup flour
8 tablespoons corn starch
Steps:
- Preheat the oven to 300° F.
- Place a piece of parchment paper to cover a baking sheet.
- Combine the softened butter and sugar in a large bowl and beat until the mixture becomes puffy in appearance.
- In another bowl, sift the flour and corn starch. Whisk to be certain the dry ingredients are evenly combined.
- Use a fork to stir the butter and sugar mixture. Add the dry ingredients, ¼ cup at a time, stirring constantly. When that ¼ cup is fully incorporated, add the next until all the dry ingredients have been added. The dough should be smooth, not lumpy.
- Measure out a tablespoon of dough and roll into a smooth ball. Place on parchment paper and press flat with your palm into rounds about 1/4” inch thick.
- Place baking sheet in oven and bake at 300° F for 25 minutes. Do not allow cookies to brown. They will be slightly soft.
- Remove from oven and place baking sheet on a wire rack to cool.
- When cool, cookies will be crisper. Use a spatula to remove the cookies from the baking sheet.
- Plate and serve.
- Any leftovers should be placed in an airtight container.
