Yield: approximately 2 dozen

 

Ingredients:

 

10 tablespoons unsalted butter, at room temperature

 

¼ cup powdered sugar

 

¾ cup flour

 

8 tablespoons corn starch

 

 

 

Steps:

  1. Preheat the oven to 300° F.
  2. Place a piece of parchment paper to cover a baking sheet.
  3. Combine the softened butter and sugar in a large bowl and beat until the mixture becomes puffy in appearance.
  4. In another bowl, sift the flour and corn starch. Whisk to be certain the dry ingredients are evenly combined.
  5. Use a fork to stir the butter and sugar mixture. Add the dry ingredients, ¼ cup at a time, stirring constantly. When that ¼ cup is fully incorporated, add the next until all the dry ingredients have been added. The dough should be smooth, not lumpy.
  6. Measure out a tablespoon of dough and roll into a smooth ball. Place on parchment paper and press flat with your palm into rounds about 1/4” inch thick.
  7. Place baking sheet in oven and bake at 300° F for 25 minutes. Do not allow cookies to brown. They will be slightly soft.
  8. Remove from oven and place baking sheet on a wire rack to cool.
  9. When cool, cookies will be crisper. Use a spatula to remove the cookies from the baking sheet.
  10. Plate and serve.
  11. Any leftovers should be placed in an airtight container.
