Yield: approximately 4 tablespoons

 

 

Ingredients:

 

1 ½ tablespoons sweet Hungarian paprika

 

1 ½ tablespoons annetto seed powder

 

1/8 teaspoon freshly ground nutmeg

 

½ teaspoon freshly ground black pepper

 

½ teaspoon ground cumin

 

2 teaspoons dried Mexican oregano, stems removed

 

2 teaspoons grated garlic

 

2 tablespoons white vinegar

 

 

Directions:

 

Be careful not to allow the annetto powder or Achiote paste to touch anything that can be stained as the annetto seeds are used as a red dye.

 

Use a spice grinder to grind the annetto seed if powder is not available.

 

Grate nutmeg.

 

Combine the spices and stir until well mixed. Add garlic and vinegar.

 

Stir to combine.

 

Chill overnight to meld flavors before using.
