Ingredients:

 

1 pound peeled boiling potatoes, sliced in 1/2” slices

 

Cold water

 

 

Garnishes:

 

Snipped parsley

 

Paprika

 

Unsalted butter

 

Salt

 

Freshly ground black or white pepper

 

 

 

Process:

 

Place potatoes in large saucepan.

 

Cover with cold water by an inch.

 

Place saucepan on stove over medium high heat. Bring to a boil.

 

Reduce heat and simmer for 8-10 minutes. Test with a fork. The potatoes should be fork tender (easily pierced with a fork).

 

Pour off water through strainer.

 

Place the saucepan with potato slices back on the stove on medium heat.

 

Allow the heat to evaporate any excess water on the potatoes. When the majority of the steam is gone, they are ready. Shake the pan frequesntly to prevent potato slices from sticking to the bottom of the pan.

 

Place in a serving dish or plate.

 

Garnish as desired.

 

Serve.
