Ingredients:
1 teaspoon Cajun Blend
2 – ¾ pound sweet potato
2 teaspoons grapeseed oil
Steps
- Preheat oven to 400° F.
- Line a baking sheet with parchment paper.
- Scrub the sweet potatoes.
- Peel the sweet potatoes.
- Slice each sweet potato in half, lengthwise. Slice each half into 3-4 wedges.
- Pierce the cut sides of each wedge with a fork approximately 6 times.
- Brush the cut sides of the wedges with grapeseed oil.
- Sprinkle Cajun Blend mix over the cut surfaces of the wedges.
- Place sweet potatoes on the baking sheet.
- Bake in preheated oven for 1 hour, or until fork-tender.
- Remove from oven.
- Place on serving platter or bowl.
- Serve.
