Ingredients:

 

3 ½ cups cold water, divided

 

½ teaspoon salt

 

1 ¼ cups yellow cornmeal

 

 

Suggested additions:

 

Blackberries

 

Blueberries

 

Brown sugar

 

Butter

 

Cream

 

Maple syrup

 

Milk

 

Poached egg

 

Raisins

 

Raspberries

 

Strawberries

 

Turbinado sugar

 

Whole corn niblets (heated)

Process:

 

Stir the cornmeal into 1 cup cold water in a bowl. Allow to rest for 10 minutes.

 

Combine 2½ cups of cold water and salt in a saucepan.

 

Bring the water to a boil over high heat.

 

When the water boils, add the wet cornmeal, by rounded tablespoon, to the boiling water, stirring constantly after each addition to incorporate.

 

Reduce heat to low.

 

Stir the mush constantly for about 5 minutes. The texture may be gritty at this point. The texture will depend on the cornmeal grind. Cornmeal comes in a coarse, medium, and fine grind. The finer the grind, the quicker the mush will become smooth. Taste the mush. Some people prefer a gritty texture, some smooth. For a smoother mush, cover with a tight fitting lid and allow to steam for 20 minutes or more.

 

Serve in a bowl with desired additions.
