2 eggs (choose your style)
1 pound ham steak
1 Tablespoon unsalted butter
Additions:
Ham glaze*
Barbecue sauce

Sourdough toast
Chunky applesauce with cinnamon

Fruity Ham Glaze:
1 Tablespoon Dijon mustard
1 Tablespoon honey
1 Tablespoon apricot or peach preserves or pineapple jam
1 teaspoon Worcestershire sauce
1 teaspoon apple cider vinegar
1/8 teaspoon ground cinnamon
A pinch of cloves
Process:
Stir glaze ingredients together and brush on the ham as indicated in the directions for frying the ham steak.
Savory Ham Glaze:
¼ cup brown sugar
1 Tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon apple cider vinegar
Pinch of cloves
Process:
Stir glaze ingredients together and brush on the ham as indicated in the directions for frying the ham steak.
Deviled Ham Glaze:
¼ cup brown sugar
1 Teaspoon dry ground yellow mustard
1 teaspoon apple cider vinegar
Process:
Stir glaze ingredients together and brush on the ham as indicated in the directions for frying the ham steak.
Process:
If a glaze is desired, mix the ingredients of the chosen glaze in a small bowl.
Heat a cast iron skillet large enough to hold the ham over medium heat.
Melt the butter in the skillet.
Sear the ham steak in butter, until browned, on both sides.
If desired, brush with the chosen glaze.
Turn and brush the second side with the glaze.
Turn and allow the glaze on the bottom layer to become sticky.
Plate and brush the top of the ham steak with a second layer of glaze.
Plate eggs with ham steak and add any chosen sides.
Serve.
