Ingredients:
3-4 strips of bacon
4 oysters
Soda cracker crumbs or bread crumbs
3 eggs, divided with 2 in one bowl and the third in another
1 Tablespoon butter
3 Tablespoons of flour
1 spring onion, sliced in thin rings through the greens.
Reserve white rings in one bowl, green rings in another.
One slice toasted and buttered sourdough bread cut 1/2” thick, crust removed.
2 cups vegetable oil
Additions:
Fried potatos may be added or substituted for the sourdough toast
Garnishes:
Lemon slices
Crumbled blue cheese
Blue cheese dressing
Process:
Heat oven to 250°F.
Fry the bacon until tender crisp. The bacon should be bendable. Place paper towels in a bowl approximately the size of the slice of sourdough bread. Press the bacon strips sideways against the walls of the bowl to cause them to curl. Place in the oven.
Drain bacon fat from skillet.
Place flour and chosen crumbs in separate bowls.
Beat the single egg until uniform in color.
Place add pinch of salt and pepper to flour. Mix well.
Place the oil in a saucepan and heat to 350°F.
Place an oyster in the flour, coat completely.
Place flour coated oyster in the egg to cover.
Place egg covered oyster in the crumbs. Use a spoon to lift the crumb covered oyster.
Gently lower the oyster into the 350°F oil.
Repeat process with the other oysters. Do not overcrowd the oysters as this will cause the oil temperature to fluctuate and the crumb coating will be compromised.
Fry oysters on both sides until golden brown.
Reserve oysters on paper towels.
Heat skillet over medium heat.. Add butter and allow it to melt.
Beat the two eggs until uniform in color.
Pour the eggs into the skillet. Use a spatula to push the eggs towards the opposite side. Turn the skillet a corner turn. Again, use the spatula to push the eggs towards the opposite side. Continue this process until the eggs are just cooked. Remove from heat.
Plate the sourdough bread. If substituting fried potatoes, plate them instead. If adding fried potatoes, see below.
Place the bacon around the sourdough bread in a circle, on edge, forming a rim.
If adding the fried potatoes, place them on top of the bread.
Sprinkle the bread or potatoes (if added) with white onion rings.
Place the scrambled egg on top of the white onion rings.
Place the fried oysters on top of the scrambled eggs.
Garnish as desired with the green onion rings and/or crumbled bleu cheese. .
Serve.
