Single Serving
Ingredients:
¾ cup ice cold soda water (sparkling water or club soda may be substituted)
¼ cup ice cold lemon syrup (recipe below)
1 teaspoon Acid Phosphate*
Garnish:
Thin lemon slices, pips removed
Container:
Chilled 8 ounce + glass
Process:
All of the ingredients and the glass should be well chilled as adding ice quickly dilutes the refreshing nature of this drink.
Tilt the chilled glass at approximately 20 degrees and gently pour the soda water down the inside of the glass to preserve as much carbonation as possible.
Add the Acid Phosphate* to the soda water.
Add the lemon syrup.
Gently stir to preserve as much of the carbonation as possible.
Add the rest of the soda water, again tilting the glass and pouring the soda water down the inside on the glass.
Garnish with a lemon slice.
Serve.
* Caution: Phosphate has been associated with kidney disease and stones. This is still a refreshing drink without it.
Lemon Syrup
Yield: approximately 1 ½ cups lemon syrup
Ingredients:
1 ½ cups granulated sugar
1 ½ cups lemon juice (approximately 5 large lemons)
Process:
Add the lemon juice and sugar to a saucepan over medium heat.
Stir continuously until the sugar has dissolved.
Bring the liquid to a simmer for 10 minutes, stirring frequently.
Allow the syrup to cool.
While the syrup is cooling, sterilize a pint jar, lid and ring.
Strain the syrup through a fine sieve into a funnel over the sterilized pint jar.
Place lid on top of the jar and finger tighten the ring.
Place container in the ice box until cold before using.
