Ingredients:

 

1 pound peeled boiling potatoes, sliced in 1/2” slices

 

Cold water

 

2 cups chopped onions

 

1 teaspoon oil

 

¼ teaspoon salt

 

1 tablespoon unsalted butter

 

 

Garnishes:

 

Snipped parsley

 

Paprika

 

Unsalted butter

 

Salt

 

Freshly ground black or white pepper

 

 

 

Process:

 

Potatoes:

 

Place potatoes in large saucepan.

 

Cover with cold water by an inch.

 

Place saucepan on stove over medium high heat. Bring to a boil.

 

Reduce heat and simmer for 8-10 minutes. Test with a fork. They are done when they are fork tender (easily pieces with a fork). Pour off water through a strainer.

 

Place the saucepan with potato slices back on the stove on medium heat.

 

Allow the heat to evaporate any excess water on the potatoes. When the majority of the steam is gone, they are ready. Shake the pan frequesntly to prevent potato slices from sticking to the bottom of the pan.

 

 

Onions:

 

Heat a skillet over medium heat. When hot, add the oil. Rotate the pan to distribute the oil evenly across the bottom.

 

Add onions. Sprinkle with salt.

 

Saute the onions until they are translucent and soft stirring frequently.  

 

When cooked, add butter.

 

Saute until slightly golden.

 

 

Add potatoes to sauted onions. Toss lightly to combine.

 

Place in a serving dish or plate.

 

Garnish as desired.

 

Serve.
