Ingredients:

 

2 cups beef broth

 

1 Tablespoon cornstarch

 

½ teaspoon dried rosemary leaves or 1 large sprig fresh rosemary

 

1 clove garlic, peeled and crushed

 

1/8th teaspoon pepper

 

1/8 teaspoon salt

 

1 tablespoon unsalted butter

 

 

 

Process:

 

Dissolve the cornstarch in the cold broth, whisking until the cornstarch is thoroughly incorporated.

 

Bring all ingredients to a simmer, whisking constantly.

 

Continue whisking until the broth clears.

 

Simmer for 10 minutes, whisking frequently.

 

Strain into serving bowl. Discard solids.

 

Add butter and gently stir until melted.

 

Serve immediately.
