2 cups crushed ice
2 cups chilled water
½ cup freshly squeezed lemon juice, pips removed

Steps
- Allow lemons to come to room temperature.
- Roll each lemon on a hard surface, pressing firmly until the lemon feels soft. The amount of time will vary with the size of the lemon.
- Place sugar in a clean quart jar.
- Cut whole lemons into thin slices. Remove pips.
- Place lemon slices in the bottom of the quart jar on top of the sugar.
- Muddle the lemon slices with a wooden tamper/muddler/vegetable packer or wooden spoon until the slices release their juice and the sugar begins to dissolve.
- Add crushed ice.
- Add chilled water.
- Tightly screw lid onto quart jar.
- Shake until sugar dissolves.
- Add fresh lemon juice to the quart jar.
- Screw lid onto quart jar and shake again, vigorously.
